Instructions

- Optional: Lightly roast blanched pistachios for a deeper flavor.
- Add pistachios to a high-speed blender or food processor and pulse until crumbly.
- Gradually add oil while blending until a creamy consistency forms.
- Mix in sugar or honey to taste, and add optional flavorings like vanilla or lemon zest.
- Transfer to a clean, airtight glass jar and refrigerate.
Notes
Store in an airtight jar in the fridge for 2–3 weeks. Avoid using old pistachios or skipping the blanching step for best color and taste.
